1 to 1¼ pounds boneless skinless chicken thighs cut into 1-inch pieces
1 cup all-purpose flour
½ cup cornstarch
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon white pepper
1 teaspoon paprika
½ teaspoon salt
Optional cayenne pepper or chili powder for heat
2 eggs beaten
1 cup buttermilk
Instructions
