Ingredients
1 ½ cups graham cracker crumbs

2 pounds cream cheese softened

1 tablespoon lemon juice
Instructions
Preheat your oven to 325°F 163°C In a bowl combine the graham cracker crumbs sugar and melted butter Stir until everything is evenly mixed
Press the crumb mixture firmly into the bottom of a 9-inch springform pan Bake for about 10 minutes then remove it from the oven and let it cool while preparing the filling
In a mixing bowl beat the softened cream cheese and sugar until smooth Add the vanilla extract and mix well
Add the eggs one by one mixing well after each Finally stir in the sour cream
Pour the cheesecake mixture into the cooled crust and smooth the top Bake for 55-60 minutes or until the edges are set
Allow the cheesecake to cool before chilling it in the fridge for at least 4 hours or overnight
Prepare the strawberry topping by mixing sliced strawberries with sugar and lemon juice Top the cheesecake with the strawberries before serving

Make sure to let the cheesecake cool completely before refrigerating for best results
