Instructions
 

  • Shred the cheddar and Monterey Jack cheeses, chop the chipotle peppers, and measure out the other ingredients.
  • In a medium saucepan, melt butter over low heat. Whisk in flour and cook for 2 minutes until it turns golden.
  • Gradually add milk while whisking to avoid lumps. Increase heat slightly and cook until the mixture thickens.
  • Reduce heat and slowly add shredded cheeses, stirring until each addition is fully melted and smooth.
  • Stir in the chopped chipotle peppers, garlic powder, and salt. Add lime juice and mix well to combine.
  • Serve warm with tortilla chips, as a topping for tacos, burritos, or nachos, or enjoy it as a creamy dip for vegetables.

Notes

For a spicier queso, add more chipotle peppers or a pinch of cayenne pepper. You can also make this dip ahead of time and reheat it with a splash of milk to restore its creamy texture.
