Choco Chips Coffee Cookies are a delicious fusion of rich coffee flavor and sweet chocolate chips, perfect for coffee and cookie lovers. These cookies are chewy, flavorful, and sure to satisfy any sweet tooth.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, salt, and optional cinnamon. Set aside.
In another bowl, beat together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. Add eggs one at a time, beating after each addition. Stir in the vanilla extract and espresso powder.
Gradually fold in the dry ingredients until combined. Do not overmix.
Gently stir in the chocolate chips.
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden but the centers are still soft. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

If you prefer a more intense coffee flavor, add an extra tablespoon of espresso powder. For a sweeter, more indulgent cookie, use milk chocolate chips.
