Classic Dill Pickle Macaroni Salad

Ingredients
  

  • 2 cups Elbow Macaroni
  • 1 cup Mayonnaise
  • 1 tbsp Dijon Mustard
  • 1 tbsp Dill Pickle Juice
  • 3 large Dill Pickles chopped
  • 2 sticks Celery diced
  • 1/4 cup Red Onion finely chopped
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 tsp Sugar
  • 2 large Hard Boiled Eggs optional

Instructions
 

  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions, about 7-8 minutes. Drain and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the mayonnaise, Dijon mustard, pickle juice, salt, pepper, and sugar. Whisk until smooth.
  • Chop the dill pickles, celery, and red onion. If using hard-boiled eggs, chop them as well.
  • Add the cooled macaroni, chopped ingredients, and hard-boiled eggs (if using) to the bowl with the dressing. Gently stir to combine, being careful not to break the macaroni.
  • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld together. Stir before serving and adjust seasoning with more salt, pepper, or pickle juice if desired.

Notes

This salad is perfect for picnics, potlucks, and family gatherings. Feel free to add or substitute ingredients, like shredded carrots, peas, or even bacon, to make it your own.
