Base Ingredients

  • 1 cup egg beaten
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Toppings

  • 1 cup bell peppers diced
  • 1/2 cup sliced mushrooms
  • 1/4 cup black olives sliced
  • 1 cup pepperoni sliced (optional)

Seasoning

  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a 9x9 inch baking dish with cooking spray.
  • In a large mixing bowl, combine the beaten eggs, shredded mozzarella, and Parmesan cheese. Stir in the bell peppers, mushrooms, black olives, and pepperoni (if using). Add garlic powder, onion powder, and oregano, and mix well.
  • Pour the mixture into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
  • Remove from the oven and let the pizza bake cool for a few minutes before slicing into squares or serving as a casserole.

Notes

For a vegetarian version, skip the pepperoni and load up on extra vegetables. You can also experiment with different cheeses or use a low-fat option for a lighter dish.
