Easy Chicken Kofta

Ingredients
  

  • 1 lb Ground Chicken
  • 1/4 cup Breadcrumbs
  • 1 small Onion finely grated
  • 2 cloves Garlic minced
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Paprika
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Cayenne Pepper optional
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Fresh Parsley chopped
  • 1 tbsp Olive Oil for cooking
  • 1 tbsp Lemon Juice

Instructions
 

  • In a large bowl, combine ground chicken, breadcrumbs, grated onion, garlic, cumin, coriander, paprika, cinnamon, cayenne pepper, salt, black pepper, parsley, and lemon juice. Mix well until combined.
  • Shape the mixture into oval patties or mold it around skewers if grilling.
  • Heat olive oil in a pan over medium heat. Cook the koftas for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  • If grilling, preheat the grill to medium heat and cook the koftas for about 4 minutes per side.
  • Serve hot with tzatziki, hummus, or a side of rice and salad.

Notes

For extra flavor, refrigerate the kofta mixture for 30 minutes before cooking. You can also bake the koftas at 375°F (190°C) for 20 minutes for a healthier option.
