Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 small onion finely grated
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon olive oil for cooking
  • 1 tablespoon lemon juice

Instructions

  • In a large bowl, combine ground chicken, breadcrumbs, grated onion, garlic, cumin, coriander, paprika, cinnamon, cayenne pepper, salt, black pepper, parsley, and lemon juice. Mix well until combined.
  • Shape the mixture into oval patties or around skewers if grilling.
  • Heat olive oil in a pan over medium heat. Cook the koftas for about 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  • If grilling, preheat the grill to medium heat and cook for about 4 minutes per side.
  • Serve hot with tzatziki, hummus, or a side of rice and salad.

Notes

  • For extra flavor, refrigerate the kofta mixture for 30 minutes before cooking.
  • You can bake them at 375°F (190°C) for 20 minutes for a healthier option.
  • Serve with pita bread, tahini sauce, or a cucumber yogurt sauce.
