Ingredients
  

  • 1 cup Mushrooms finely chopped
  • 1/2 cup Carrots grated
  • 1/2 cup Zucchini grated and excess moisture squeezed out
  • 1 cup Black Beans mashed
  • 1/4 cup Breadcrumbs
  • 1 tbsp Flaxseed Meal for flax egg
  • 3 tbsp Water for flax egg
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 2 tbsp Olive Oil for frying

Instructions
 

  • In a small bowl, mix the flaxseed meal with water and let it sit for 10 minutes to form a flax egg.
  • In a large bowl, combine the mushrooms, carrots, zucchini, mashed black beans, breadcrumbs, garlic powder, cumin, paprika, and salt.
  • Add the flax egg to the mixture and stir well to combine. If the mixture is too dry, add a little more water to achieve a thick, sticky consistency.
  • Shape the mixture into small patties, about 1/2 inch thick.
  • Heat olive oil in a non-stick skillet over medium heat. Cook the patties for 3-4 minutes per side, until golden brown and crispy.
  • Transfer the cooked patties to a paper towel-lined plate to absorb excess oil.
  • Serve warm with your favorite dipping sauce or on a bun with fresh toppings!

Notes

These veggie patties can be customized with different vegetables and seasonings. For a spicier version, try adding chili flakes or cayenne pepper. For a gluten-free option, use gluten-free breadcrumbs.
