Ingredients
  

  • Roma Tomatoes
  • Olive Oil
  • Kosher Salt
  • Black Pepper
  • Garlic (optional)
  • Balsamic Vinegar (optional)
  • Red Pepper Flakes (optional)

Instructions
 

  • Start by rinsing your tomatoes under cold water and patting them dry. Cut them in half horizontally and remove the seeds and excess moisture.
  • Preheat your grill to medium-high heat (around 400-500°F) or set your oven to 450°F (232°C).
  • Brush the tomatoes with olive oil and season with salt and pepper. You can also add garlic, balsamic vinegar, or red pepper flakes for additional flavor.
  • Grill the tomatoes cut-side down for 4-5 minutes until you see char marks, then flip and cook for another 3-5 minutes until the skin is also charred.
  • For the oven method, place the tomatoes cut-side up on a baking sheet and roast for 30-45 minutes, depending on your desired texture.
  • Once done, remove the tomatoes and let them cool. Store in an airtight container or freeze them for later use.
