  • Once the milk reaches 185°F (85°C), add lemon juice slowly, stirring gently. The milk should start to curdle.
  • Allow the curds to form, then strain the curds from the whey using a cheesecloth-lined colander.
  • Press the curds to remove excess liquid, then sprinkle salt and mix gently. Let the cheese rest and chill for 2-3 hours in the refrigerator.
  • Once chilled, the queso blanco is ready to be used in recipes or served on its own.
