Ingredients
  

Pie Filling

  • 2 large sweet potatoes cooked and mashed
  • 1 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup evaporated milk

  • 1/2 cup pecans chopped, for topping
  • 1/4 cup brown sugar
  • 1/4 cup butter melted

Instructions
 

  • Preheat the oven to 350°F (175°C). Prepare your pie crust in a 9-inch pie pan, setting it aside.
  • Boil or bake the sweet potatoes until tender. Once cooled, peel and mash them well.
  • In a mixing bowl, combine the mashed sweet potatoes, sugar, cinnamon, nutmeg, salt, eggs, and evaporated milk. Mix until smooth and well combined.
  • Pour the sweet potato filling into the prepared pie crust and smooth the top with a spatula.
  • In a small bowl, combine the pecans, brown sugar, and melted butter. Sprinkle this topping over the pie filling.
  • Bake the pie in the preheated oven for 45-50 minutes, or until the filling is set and the crust is golden brown. Let cool completely before serving.

Notes

For an extra touch, serve with a dollop of whipped cream or a drizzle of caramel sauce. This pie can be made a day ahead and stored in the refrigerator.
