Instructions
Preheat your oven to 350°F (175°C). Grease a baking dish with butter or non-stick spray.
Peel and slice the peaches into thin, uniform slices. Toss them with granulated sugar, lemon juice, and cinnamon. Let the mixture sit for a few minutes to release the juices.
In a separate bowl, combine the flour, oats (if using), brown sugar, and salt for the topping.
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Optionally, add cinnamon or nutmeg for extra flavor.
Place the peaches in the prepared baking dish, spreading them evenly. Sprinkle the crisp topping generously over the peaches.
Bake for 30-40 minutes or until the topping is golden brown and the peach filling is bubbling around the edges.
Let the crisp cool for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
For added flavor, you can add a sprinkle of sliced almonds, walnuts, or coconut to the topping. For a more textured topping, try using chopped nuts as well.
