Purple Sweet Potatoes

  • 4 medium Purple Sweet Potatoes Rich in antioxidants and ideal for roasting, boiling, or mashing.

Healthy Fats

  • 2 tbsp Olive Oil For roasting or seasoning.
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes. Pierce them a few times with a fork if you plan to bake them whole.
  • If roasting, cut the sweet potatoes into cubes and toss them in olive oil, salt, and pepper.
  • Place them on a baking sheet and roast for 30-40 minutes, flipping halfway through for even cooking.
  • If boiling or steaming, peel and cube the sweet potatoes, then cook until fork-tender (about 20–30 minutes).
  • Serve the roasted sweet potatoes as a side dish, or mash them with butter for a creamy texture.

Notes

Leaving the skin on boosts nutritional value, but peeling the sweet potatoes can give you a smoother texture for mashed dishes or desserts.
