Tanghulu

Tanghulu is a popular Chinese street food that coats fresh fruit in a crunchy sugar shell. The fruit can be of your choice, and the treat is perfect for festivals or as a fun, sweet snack.

Ingredients
  

  • 2 parts Granulated Sugar
  • 1 part Water
  • Fruit (strawberries, grapes, kiwi, or hawthorn berries)

Instructions
 

  • Wash and dry the fruit thoroughly, then thread them onto wooden skewers.
  • In a small saucepan, combine sugar and water in a 2:1 ratio. Heat the mixture over medium heat, stirring until the sugar dissolves.
  • Once the sugar is dissolved, stop stirring and allow the syrup to come to a boil. Clip the candy thermometer to the pan and heat the syrup to 300°F (150°C), the hard-crack stage.
  • Once the syrup reaches 300°F (150°C), remove the saucepan from the heat. Quickly dip each skewer of fruit into the hot syrup, ensuring it is evenly coated.
  • Place the dipped fruit onto a parchment-lined tray to cool and harden. Allow the tanghulu to set for about 5 minutes.

Notes

Tanghulu is best served fresh, as the crunchy sugar coating can soften over time. Try using a variety of fruits such as strawberries, grapes, or even tangerine segments for fun and colorful twists.
